Anthocyanins and Proanthocyanidins: Chemical Structures, Food Sources, Bioactivities, and Product Development

چکیده

Anthocyanins and proanthocyanidins are widespread in the plant kingdom involved important bioactivities, such as antioxidation. These flavonoids can reduce risk of cardiovascular diseases, cancer, high blood pressure, hyperlipidemia, diabetes; consequently, they widely studied for disease prevention treatment. In this review, we summarize recent advances our understanding chemical structures, food sources, bioactivities these compounds. We also discuss developments trends related to anthocyanin- proanthocyanidin-derived products. This review provides insights inform research inspire future studies help realize potential pigments.
